Made this today, but replaced the mushrooms with red peppers. It was VERY good. This recipe feeds my family of 3 twice and then some, so its great to have for a leftovers meal. YAY!

I just used Italian seasoning on this one and a little salt & Pepper to taste. It is in the oven for 20 minutes

Whats the best way to measure food portions? for example 1 cup of pasta or so.

i have a huge struggle because here in portugal 1- we dont have the huge choice of healthy food (its dificult to find even brown rice)
2- it´s 4 or more times more expencive and we are strugling
3- my son hates vegetabels
and my goal is to give my family the healthiest food.
I would at least focus on fruits and vegetables. Stay away form white sugar and white pastas and rice. Sorry I do not have a better answer for you.
