I’m just curious…What would happen if you don’t soak the Cashews??
The purpose to soaking the cashews is to release or deactivate the enzyme inhibitors that prevent the cashew from sprouting or germinating out side of ideal growing conditions. When you soak nuts or seeds, you are providing those conditions in which the nut/seed need to germinate. This also allows for higher nutrient absorption and availability and also renders them more digestible.
FYI, the nutritional benefits of soaking only applies to truly raw cashews (most aren’t) because they use heat and steam in their processing.
Soaking the cashews also adds moisture and water so they blend easier into the sauce.
